Obtained from Vermentino grapes grown in Sicily. Once destemmed the grapes are left in the pneumatic press with dry ice for a few hours to extract terpene aromas of the variety. After the pressing the must is transferred in stainless-steel tanks where it is chilled to allow a cold settling. Selected yeasts are added to initiate the alcoholic fermentation which takes place at controlled temperature of 16-18°C. When the fermentation is completed the wine is left aging on the fine lees before being bottled.
The colour is straw yellow with greenish reflections. Captivating nose with hints of orange blossom, peach, and wild grass notes.
